Our Nica friend Blanca showed us how to make raw cacao beans into the most aromatic dark chocolate powder. First the raw beans are roasted in a dry pot. When the beans get hot the skins can be peeled off. After the beans are cool then they can be ground into the most yummy strong (as good as freshly ground coffee but totally different ) rich earthy smell.
